Tangy Potato Salad without Mayonnaise

Enjoy a summer-friendly potato salad without the worry of mayonnaise spoiling in the heat!

Ingredients
  

  • 5 large potatoes boiled and cubed
  • 2 hard-boiled eggs sliced
  • ½ cup white onion finely chopped
  • ½ cup celery diced
  • ½ cup green onion sliced
  • ¼ cup white vinegar
  • ¼ cup oil your preference
  • ½ tsp pepper
  • 1 tsp salt
  • ½ cup fresh dill

Method
 

  1. Boil the potatoes until tender, then cube and let them cool.
  2. Boil the eggs, then slice them.
  3. In a small bowl, mix together the vinegar, oil, salt, and pepper.
  4. Combine the cooled potatoes, eggs, white onion, celery, and green onion in a large bowl.
  5. Pour the vinegar and oil mixture over the potato mixture and toss gently to combine.
