Cottage Cheese Quiche
This quick protein-packed quiche uses a simple tortilla base, blended cottage cheese, eggs, and fresh vegetables. It’s warm, satisfying, high in protein, and comes together in about 10 minutes.

- 1 large whole wheat or low-carb tortilla
- ½ cup cottage cheese blend for creaminess
- 3 eggs
- ½ cup shredded cheese
- ½ cup chopped vegetables spinach, mushrooms, peppers, etc.
- Salt & pepper
- 1 tsp olive oil or butter
Instructions
- Preheat oven to 350°F.
- Press tortilla into a greased oven-safe dish to form a crust.
- Blend cottage cheese. Whisk with eggs, salt, pepper, and vegetables.
- Pour into tortilla and top with shredded cheese.
- Bake 10–12 minutes until set and lightly golden.
- Let cool slightly, slice, and enjoy.
