Ingredients

  • 1 lb shrimp peeled and deveined
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • ½ tsp cumin
  • ½ tsp smoked paprika
  • ½ tsp garlic powder
  • Salt and pepper to taste
  • Juice of ½ lime
  • For the Mango Salsa:
  • 1 ripe or frozen mango diced
  • ¼ red onion finely chopped
  • ½ red or yellow pepper
  • 1 small jalapeño deseeded and minced (optional)
  • Juice of 1 lime
  • 2 tbsp chopped fresh or dried cilantro
  • Pinch of salt
  • For Cilantro Lime Yogurt Sauce
  • ½ cup plain Greek yogurt or coconut yogurt for dairy-free
  • 1 clove garlic minced
  • Juice of 1 lime about 2 tbsp
  • 2 tbsp chopped fresh cilantro
  • 1 tbsp olive oil
  • ½ tsp honey or maple syrup optional, balances acidity
  • Salt and pepper to taste
  • Water 1–2 tbsp to thin if needed

Instructions

  • Prepare the Shrimp:
  • In a bowl, toss shrimp with olive oil, chili powder, cumin, paprika, garlic powder, salt, pepper, and lime juice.
  • Heat a skillet over medium-high heat and cook shrimp for 2–3 minutes per side until pink and opaque.
  • Make the Mango Avocado Salsa:
  • In a bowl, gently combine diced mango, red onion, jalapeño (if using), lime juice, cilantro, and salt.
  • Assemble the Tacos:
  • Warm corn tortillas.
  • Add a layer of shredded cabbage, top with cooked shrimp, then spoon on mango salsa.

  • 4 medium-sized beets peeled & julienned
  • 2 large carrots julienned
  • 1 can 15 oz chickpeas, rinsed & drained
  • ¼ cup pumpkin seeds
  • ½ small red onion thinly sliced
  • ½ cup feta cheese crumbled
  • 4 cups mixed greens spinach, arugula, kale
  • Dressing
  • ¼ cup olive oil
  • 2 tbsp red wine vinegar
  • 1 tbsp maple syrup
  • Salt & pepper to taste

Instructions

  • 1️. Prep the beets and carrots by peeling and julienning them.
  • 2️. In a large bowl, toss together mixed greens, beets, carrots, chickpeas, pumpkin seeds, and red onion.
  • 3️. Whisk together olive oil, vinegar, maple syrup, salt, and pepper for a flavorful dressing.
  • Drizzle over the salad and toss gently.
  • 5️. Top with crumbled feta cheese and enjoy immediately or chill for 15-30 minutes to enhance the flavors!
