Heat the olive oil in a pan over medium heat. Add the onion and garlic and sauté until softened. Transfer to a large mixing bowl and let cool.

In a separate bowl, mix all the wet ingredients together.

Add all the dry ingredients to the cooled onion and garlic mixture, and mix well.

Slowly add the wet ingredients to the dry ingredients, mixing thoroughly until well combined.

If too dry, add liquid (water) to form patties.

Shape the mixture into patties and place them on a greased cookie sheet.

Bake: Bake in a preheated oven at 375°F (190°C) for 20 minutes or until firm and cooked through.

Note: These patties freeze well. Allow them to cool completely before freezing.
