4small potatoesthinly sliced

Olive oil for drizzle
¾cupunsweetened coconut milkor cashew cream
2eggsbeaten
1tspcurry powder
1cupdairy-free mozzarella or nutritional yeast

Instructions
Layer potatoes, onion and chicken in dish; drizzle oil. Whisk coconut milk, eggs & curry; pour over. Bake 45 min @ 350°F; add tomato + cheese, bake 10 min more.
