Ingredients
- 1 cup pearl barley
- 8 oz mushrooms sliced
- 1 onion chopped
- 3 cloves garlic minced
- 4 cups vegetable broth
- 2 carrots diced
- 2 celery stalks diced
- 1 tsp dried thyme
- Salt and pepper to taste
- Olive oil for sautéing
Instructions
