Ingredients
- 4 medium-sized beets peeled & julienned
- 2 large carrots julienned
- 1 can 15 oz chickpeas, rinsed & drained
- ¼ cup pumpkin seeds
- ½ small red onion thinly sliced
- ½ cup feta cheese crumbled
- 4 cups mixed greens spinach, arugula, kale
- Dressing
- ¼ cup olive oil
- 2 tbsp red wine vinegar
- 1 tbsp maple syrup
- Salt & pepper to taste
Instructions
- 1️. Prep the beets and carrots by peeling and julienning them.
- 2️. In a large bowl, toss together mixed greens, beets, carrots, chickpeas, pumpkin seeds, and red onion.
