Ingredients

  • 1 large whole wheat or low-carb tortilla
  • ½ cup cottage cheese blend for creaminess
  • 3 eggs
  • ½ cup shredded cheese
  • ½ cup chopped vegetables spinach, mushrooms, peppers, etc.
  • Salt & pepper
  • 1 tsp olive oil or butter

Instructions

  • Preheat oven to 350°F.
  • Press tortilla into a greased oven-safe dish to form a crust.
  • Blend cottage cheese. Whisk with eggs, salt, pepper, and vegetables.
  • Pour into tortilla and top with shredded cheese.
  • Bake 10–12 minutes until set and lightly golden.
  • Let cool slightly, slice, and enjoy.
